How to grow Jerusalem Artichokes (Sunchokes)
The best time to plant the sunchokes tubers is early spring and they can be planted in pots or directly into the ground (which I have done). Plant them 10cm deep and 25 cm apart. Make sure it is near a wall or protected area as the plant can grow up to 3m high and might need a bit support if the wind gets gutsy. They are relatively maintenance free and should be ready in late autumn but I only take out as many as I need and keep the rest in the ground for later. You can also store them in sand in a cool room or fridge.
They can be cooked just like potatoes - soups are very nice but I also like them roasted and in a gratin.
